Letter: A story about hope (Printed Feb. 8, 2008)

Editor:
“Thank you for your article about Spelt Right [“Spelling good health S-P-E-L-T” Feb. 1]. I would like to say that this really is a story about hope. When our son, Spencer, was much younger (ages 3-7), he faced many challenges with his health and behavior. With determination and patience, we were able to completely turn his life around with a diet change. He no longer carries any of the health or behavioral “issues” he did as a younger child and is completely symptom-free. He now is a healthy and happy kid who has become an “expert” on nutritional issues. He is his own best advocate, being careful about what he eats and reading every label. Although people may react differently to different foods and food additivies, we found that our son was reactive to common wheat, high fructose corn syrup, artificial flavors, colors and preservatives. We have removed all of these offending foods and the results have been remarkable. Because we are so convinced that diet change can be beneficial to individuals struggling with health and behavioral issues, we wanted to share our story. If anyone has questions about our experiences with diet change, they can reach me at info@speltrightbaking.com.
